My husband, Steven, loved these cookies and he is a really tough cookie critic. He also does not particularly like or care whether they are healthy. These are just plain good and healthy enough to have for breakfast!
Mix together flour, spelt, baking soda, salt and spices. Mix together sugar, oil, molasses, pumpkin and vanilla very well. Add dry ingredients to wet in 3 batches. Fild in nuts and cranberries. These don't spread out much so you can place them on a greased cookie sheet pretty close together. Bake at 350 degrees for 16 minutes. These are even better the next day.
