Vegan Pumpkin-Spelt Cookies

My husband, Steven, loved these cookies and he is a really tough cookie critic. He also does not particularly like or care whether they are healthy. These are just plain good and healthy enough to have for breakfast!

  • 2 cups organic all purpose flour
  • 1 1/3 cup spelt flakes (can use oats intead but spelt is higher in protein)
  • 1 t. baking soda
  • 3/4 t. salt
  • 1 t. cinnamon
  • 1/2 t. nutmeg
  • 1 2/3 c sugar (unrefined is best)
  • 2/3 c canola oil ( I use melted Earth Balance margarine)
  • 2 T. molasses
  • 1 c Pumpkin
  • 1 t. vanilla
  • 1/2 c ground pumpkin or flax seeds
  • 1 c. walnuts finely chopped
  • 1/2 c dried cranberries (Newman's own makes organic ones!)

Mix together flour, spelt, baking soda, salt and spices. Mix together sugar, oil, molasses, pumpkin and vanilla very well. Add dry ingredients to wet in 3 batches. Fild in nuts and cranberries. These don't spread out much so you can place them on a greased cookie sheet pretty close together. Bake at 350 degrees for 16 minutes. These are even better the next day.
