You really can bake without eggs! These muffins are moist and delicious thanks to the pumpkin and coconut. Who could resist that combination!
Sift all dry ingredients together in one bowl.
Mix together in separate bowl:
Pour wet into dry and mix well. fold in 1/2 cup coconut. fill greased or lined muffin cups 2/3 full. Bake at 400 degrees for 18-20 minutes regular sized muffins. 15 minutes for little muffins.
