Mimi’s Famous Vegan Ceasar Salad Dressing
Many people have asked me for the recipe to here it is. Just be aware that I still never measure anything so please adjust amounts for your taste. This dressing is so good! I hope you love it too.
- 2 cloves garlic
- 1/3 cup walnuts
- 2 Tbls capers
- 1/2 cup nutritional yeast
- 1 Tbls dijon mustard
- juice of 1/2 lemon
- 1/2-2/3 cup extra virgin olive oil
- Salt to taste; fresh ground pepper should be added to the whole salad
- In a mini food processor, combine garlic, walnuts, capers, yeast, and mustard. Blend until creamy.
- Add lemon juice, olive oil, and salt. Blend until the consistency is of a creamy salad dressing. You should be able to toss it and coat the lettuce.
