Mimi’s Famous Vegan Ceasar Salad Dressing

Many people have asked me for the recipe to here it is. Just be aware that I still never measure anything so please adjust amounts for your taste. This dressing is so good! I hope you love it too.

  • 2 cloves garlic
  • 1/3 cup walnuts
  • 2 Tbls capers
  • 1/2 cup nutritional yeast
  • 1 Tbls dijon mustard
  • juice of 1/2 lemon
  • 1/2-2/3 cup extra virgin olive oil
  • Salt to taste; fresh ground pepper should be added to the whole salad
  1. In a mini food processor, combine garlic, walnuts, capers, yeast, and mustard. Blend until creamy.
  2. Add lemon juice, olive oil, and salt. Blend until the consistency is of a creamy salad dressing. You should be able to toss it and coat the lettuce.
  3. With this recipe, I would use about a head of romaine and either croutons or one portion of fried tofu. See Chicken Fried Tofu recipe for the archives.
