Pear Cardamom Muffins
Recipe adapted from Extra Vegan Za! Cookbook

  • 1 cup soy flour
  • 1 cup white or wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp fine sea or kosher salt
  • 3 Tbsp poppy seeds
  • 1/2 cup canola or other natural oil
  • 1/2 cup agave syrup or cane sugar
  • 1 tsp vanilla extract
  • 1 cup vanilla soy milk
  • 1-1/2 tsp cardamom ground
  • 1-1/2 tsp lemon juice, freshly squeezed
  • 1-1/2 Tbsp lemon rind
  • 1-3/4 cups pear, grated (about 2 medium-sized pears)
  1. Preheat oven to 350°F. Prepare a muffin tray by lightly greasing 12 muffin tins with oil or vegan margarine. Set aside.
  2. In a medium-sized mixing bowl, combine the flour, baking powder, baking soda ,and salt.
  3. In a separate bowl, combine the oil, sugar or agave syrup, vanilla, soy milk, lemon juice, and rind. Whisk together until emulsified. Stir the pear into the wet ingredients. Pour the wet ingredients into the dry ingredients and gently stir together, being careful not to overmix.
  4. Scoop spoonfuls of the mixture into prepared muffin tins, filling each to tin level. Place the pan in preheated oven and bake for 25 minutes. Remove from the oven and allow muffins to cool for 10-25 minutes in the pan before gently lifting them out of the tins.

Makes 12 muffins.
